• 1 15 oz can Black Beans drain and rinse well
• 1 14 oz can Diced tomatoes with Sweet Onions
• 1 11 oz can Shoepeg Corn drained
• 1/2 cup Green Pepper diced
• 1/2 cup My Sweet Greens MN Microgreens - Sunflower Shoots chopped,
• 2 Tablespoons Extra virgin olive oil
• 2 Tablespoons White Balsamic Vinegar Lemon or Citrus infused
• 1-2 Tablespoons Lime Juice
• 1/2 teaspoon Garlic Powder
• 1/2 teaspoon Onion Powder
• 1/2 teaspoon Cumin more or less to taste
• 1/2 oz My Sweet Greens Zesty Mix Microgreens Reserve for garnish
• Tortilla chips

Instructions

1. In a large mixing bowl, pour black beans, diced tomatoes w/onions (do not drain), Shoepeg corn and green pepper. Mix together. Stir in chopped sunflower shoots.

   
2. Mix together olive oil, vinegar, lime juice, onion powder, garlic powder, and cumin. Add to bowl. Stir well together and chill.

   
3. To serve: top with plenty of Zesty Mix microgreens and enjoy with tortilla chips
